How do I get access to the NS Protection Log data via the GX device or VRM?

I tried dbus-spy but could not find it there.

You can get it via dbus-spy. Look under com.victronenergy.vebus.xxx (typically ttyS4 on a cerbo), scroll down to /Devices/ and you’ll get this:
